Make Cookies From Peanut Butter and Jelly

Peanut butter was developed in 1890 and introduced as a health food at the 1904 St. Louis World's Fair. Natural peanut butter is made from shelled peanuts and peanut oil. Commercial peanut butter is a combination of shelled peanuts, peanut oil, salt, and sugar. The sugar prevents the oil from separating. Peanut butter is high in fat, but does contain some iron, niacin, and protein. Use natural or commercial peanut butter to make this delicious creation.
You'll need:
1/4 cup peanut butter 1/2 cup margarine 1/4 cup vegetable oil 1 teaspoon (tsp.) vanilla 1 egg 1 cup sugar 1 small jar of your favorite jam 2 Tbsp. milk 3 cups flour spray vegetable oil electric mixer (ADULT SUPERVISION) This recipe makes about 3 dozen cookies
What to do:
- If possible, print out these directions. Read them through with your child.
- With your child, gather everything you'll need
- Pre-heat the oven to 350 degrees F.
- Let your child measure the margarine, vegetable oil, and peanut butter into a bowl.
- Help her mix the ingredients with an electric mixer.
- Show your child how to crack the egg and pour into the bowl. Beat well.
- Add sugar, flour, vanilla, and milk to the mixture.
- Chill for 2 hours.
- Roll the dough to 1/4 inch thick on a floured cutting board.
- Challenge your child to cut the cookies with a cookie cutter.
- Show her how to coat the baking sheet with spray vegetable oil.
- Place the baking sheet in the oven and bake the cookies for 8 to 10 minutes (until golden brown).
- Remove from the oven.
- After cooling the cookies on a rack, togehter, spread 1 teaspoon of jam on a cookie and cover with another cookie to make a sandwich.
