Barbeque Vegetable Sandwich

Arugula, also referred to as rucola, rugula, and rocket is a salad green with a slightly bitter, but aromatic flavor. Arugula looks like radish leaves it is sold in small bunches. Arugula is rich in iron and a good source of vitamin A and vitamin C. Add arugula to this Italian herb grilled vegetable sandwich for a lively addition.
You'll need:
1/3 cup olive oil 2 tsp. (teaspoon) fresh or dried basil Leaves 1 tsp. (teaspoon) rosemary 1/2 tsp. (teaspoon) thyme 1/2 tsp. (teaspoon) garlic powder 1/4 tsp. (teaspoon) salt 2 eggplant, cut lengthwise in 1/4-inch slices 1 zucchini or summer squash, cut in 1/4-inch slices 1 red or yellow bell pepper, cut in 2-inch strips 1 medium Portobello mushroom, cut in 1/2-inch slices 1 small red onion, cut into 1/2-inch rounds goat cheese fresh arugula, rinsed and drained 1-10- to 12-inch prebaked Italian pizza crust, cut in half This recipe serves 6.
What to do:
- If possible, print out these directions. Read them through before you begin.
- Gather everything you'll need and always remember cooking safety.
- Before handling food, be sure to wash your hands.
- Mix together olive oil, basil, rosemary, thyme, garlic powder, and salt. Set aside.
- Ask an adult to light the barbeque.
- Or if you are using the oven, preheat the oven to broil, place vegetables on a baking sheet and lightly brush vegetables with one half of the herb mixture.
- For the barbeque, place vegetables on a rack and brush lightly herb mixture.
- Broil or grill the vegetables for 5 minutes. Turn vegetables and brush with the rest of the herb mixture.
- Cook for 3 –5 minutes. Carefully watch the vegetables so that they do not burn.
- Remove from heat.
- Evenly spread the goat cheese and layer arugula over both pizza crust halves. Build sandwich with layers of grilled vegetables. Place remaining pizza bread slice on top. Cut sandwich into 2-inch wedges before serving.
Useful information:
