Easy Roll-Ups

Most mustards are made in the same way by crushing and grinding seeds from the mustard plant, then combining the seeds with a liquid such as water, beer, vinegar, or unfermented grape juice and added seasonings. It wasn't until 1856 when Jean Naigon from Dijon, France substituted verjuice for vinegar that mustard increased its popularity and Dijon mustard was born. Use Dijon mustard to spice these simple roll-ups.
You'll need:
1 package (pkg.) cream cheese, at room temperature 1 tablespoon (Tbsp.) Dijon mustard 1 cup margarine 8 slices of whole wheat bread 3/4 pound (lb). thinly sliced ham or turkey 1 cup Parmesan cheese, grated This recipe makes 8 roll-ups.
What to do:

- Gather everything you’ll need and always remember cooking safety.
- Before handling food, be sure to wash your hands.
- Preheat oven to 300 degrees F.
- Coat a baking sheet with spray vegetable oil.
- In a small mixing bowl, combine the cream cheese with the Dijon mustard. Set aside.
- Melt the margarine in the microwave or in a small saucepan on the stove.
- Pour melted margarine into a shallow casserole dish.
- Remove crusts from the bread slices.
- Using a rolling pin, roll each piece of bread very thin.
- Put Parmesan cheese on a plate.
- Spread the cream cheese mixture on each slice of bread.
- Place a slice of ham or turkey on each slice of bread and roll up lengthwise.
- Roll the roll-up in the margarine and then in the Parmesan cheese. Place the roll-ups 1 inch apart on the baking sheet and bake for 10 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
Useful information:
It is really challenging to get my brother to eat anything other than grilled cheese sandwiches. Last weekend, my step dad and I made these easy roll-ups, and my brother ate more than anyone else. He told us he liked the spicy mustard. (Danielle, age 15)
