Star Fruit Salad

[20 Minutes]

There are two types of blueberries. The high bush variety can grow up to 15 feet, while the low bush variety grows only to 1 foot. Low bush blueberries grow abundantly in Canada and the northern United States. The blueberry season runs from May until October. Blueberries are bluish black, sweet, and juicy. Choose berries that are similar in size, dark blue with a silver-like frost. Use the fresh blueberries of summer to create this colorful, healthy dish.


You'll need:

• green lettuce leaves • 1/2 slice (1-inch thick) watermelon for each salad (ADULT SUPERVISION) • 1/2 cup cottage cheese • 1 Tbsp. fresh blueberries • measuring cup and spoons • plates • spoon

What to do:

  1. If possible, print out these directions. Read them together before you begin.
  2. Together, gather everything you’ll need and always remember cooking safety.
  3. If you are handling food, be sure to wash your hands.
  4. Let your child clean the lettuce and place it on a plate.
  5. Help your child cut the watermelon slice into 5 equal wedges. Cut away and throw out the rind.
  6. Place the melon wedges on the lettuce leaves with the points outward to make a star.
  7. Fill the space in the middle of the wedges with cottage cheese.
  8. Sprinkle the blueberries on top of the cheese.

How to use:

You can make several stars together and use as a table decoration for a holiday celebration, especially a patriotic one.
