Greek Salad

[20 Minutes]

There are hundreds of different types of cheeses depending on the type of milk used to make them. Feta cheese is a famous Greek cheese made from a mix of ewe's and goat's milk. Aged feta is salty and dry. Feta cheese is an essential ingredient in Greek salads. Make this special salad and enjoy the combination of textures and flavors.


You'll need:

• 2 cups spinach, washed and torn into small pieces • 3 cups Boston lettuce or romaine lettuce, washed and torn into small pieces • 3/4 cup crumbled feta cheese or goat cheese • 1/4 cup sliced green onions • 1 cup black olives, sliced • 1 cup of grape tomatoes or 2 tomatoes cut into wedges • 1/2 cucumber, sliced • 1/4 cup olive oil • 2 Tbsp.lemon juice, fresh squeezed is best • 1/2 teaspoon tsp. Dijon-style mustard • 1/4 teaspoon tsp. salt • 1/8 teaspoon tsp. pepper • a small bowl to mix the dressing • a salad bowl

What to do:

  1. If possible, print out these directions. Read them through with your child before you begin.
  2. With your child, gather everything you’ll need.
  3. Help your child wash and prepare the vegetables.
  4. In a large salad bowl, toss all of the ingredients together.
  5. To make the dressing:
    Place the olive oil, lemon juice, salt and pepper, and mustard in a tightly-covered container.
    Shake the dressing to thoroughly mix the ingredients.
  6. Invite your child to mix all the vegetables together in the salad bowl.
  7. Let her add the crumbled feta cheese and pour the dressing over the salad.

How to use:

Serve with pita bread and enjoy as a snack or serve with a meal.
