Chicken Stir Fry

Rice has been cultivated since around 5000 BC. Archaeologists in China have discovered sealed pots of rice thought to be 8000 years old. Rice is a very important staple in half the world's population. There are an estimated 7000 varieties. Rice is cholesterol free, sodium free, and an excellent source of complex carbohydrates. Choose your favorite rice to make this zesty, flavorful Asian dish.
You'll need:
2 6 3/4-ounce cans of chunk chicken, drained 1 large red pepper cut into 1/4-inch strips 1 tsp. cornstarch 2 Tbsp. soy sauce 3 Tbsp. oil 2 cloves of garlic, finely chopped 1 teaspoon ginger root, finely chopped 1 cup chopped broccoli 1 1/2 cup pea pods cooked rice or Chinese noodles skillet measuring cups and spoons
What to do:
- If possible, print out these directions. Read them through with your child before you begin.
- With your child, gather everything you'll need.
- Invite your child to toss the first four ingredients plus one tablespoon oil in a bowl.
- Heat two tablespoons of oil in large skillet or wok. Cook over high heat until oil is hot.
- Invite your child to add the chicken mixture, garlic, and ginger root.
- Stir until the chicken is cooked.
- Let him add broccoli and pea pods.
- Cook and stir four minutes.
- Serve over rice or Chinese noodles.
