Delicious Mexican Hot Chocolate

The word chocolate is derived from the Aztec "xocolatl" meaning bitter water. The Aztecs made a drink of powdered cocoa beans and spices, it probably tasted bitter. Montezuma, the Aztec king liked the drink so much, it is reported that he drank 50 goblets a day. Today chocolate comes in many forms from 1 ounce squares, to 1/2 chunks, to small chocolate chips, to cocoa powder. Use chocolate to make this cocoa mix from scratch. Add cinnamon and orange rind to create a warm, rich Mexican drink.


You'll need:

• 2 oz. unsweetened chocolate • 1 cup water • 1/4 sugar • 3 cups milk • cinnamon stick • orange rind • This recipe makes 6 cups.

What to do:

  1. If possible, print out these directions. Read them through before you begin.
  2. Gather everything you'll need and always remember cooking safety.
  3. Before handling food, be sure to wash your hands.
  4. Heat chocolate and water in a 1 1/2 quart saucepan, stirring constantly, until chocolate is melted and mixture is smooth.
  5. Stir in sugar and heat until boiling; reduce the heat to the low setting.
  6. Simmer uncovered, stirring constantly for 4 minutes.
  7. Stir in milk and heat just until it is hot but not boiling. Whisk the chocolate until it is foamy.
  8. Pour into your favorite mug, add one stick of cinnamon, and garnish with a thin strip of orange rind.
  9. Let cool before drinking.
