Mashed Potatoes with Toppings

Five hundred years ago, the potato a member of the nightshade family, was thought by some to be poisonous. In the 16th century, Sir Walter Raleigh dispelled that myth. He planted potatoes on his property in Ireland. Soon potatoes were grown and consumed in Ireland in large amounts. They are now grown around the world. In America, potatoes are grown in four categories; russet, long white, round white, and round red. Round white and red, sometimes referred to as boiling potatoes, are most often used to make mashed potatoes. Try these toppings on your mashed potatoes.


You'll need:

• 6 medium potatoes peeled and sliced • 1/3 to 1/2 cup milk • 1/4 cup margarine, softened • 1/2 tsp. salt • electric mixer • This recipe serves 2.

What to do:

  1. If possible, print out these directions. Read them through before you begin.
  2. Gather everything you'll need and always remember cooking safety.
  3. Before handling food, be sure to wash your hands.
  4. Place the potatoes in the pot and cover them with water and bring to a boil.
  5. Cook on the stovetop on medium temperature for 20 - 25 minutes.
  6. Place potatoes, milk, margarine, and salt in a large mixing bowl. Mash the potatoes with an electric mixer until there are no lumps.
  7. Mix until the potatoes are light and fluffy.

How to use:

Add these assorted toppings: crumbled cooked bacon, toasted sesame seeds, salsa, cheddar cheese, parmesan cheese, basil, chili powder, chopped olives, sautéed onions, red and green pepper bits and enjoy this delicious dish!

Useful information:

Making mashed potatoes is easy and everyone loves them. Mom and I make them at least once a week. We always make extra so we make mashed potato pancakes later in the week. (Alexander, age 13).
